Calling all PB lovers

You know those weekends when you have absolutely nothing to do. You scroll through Twitter, Facebook and Instagram and you're slightly jealous of your friend's Porn Star Martinis and their group selfies but you're actually more than happy to just chill.

No early morning alarms and no fighting over the bathroom to get ready *dreams of having an en-suite*. Having a lie in usually means I'll be up at 8am rather that 7am because for some reason my body decides I've had enough sleep. So now I'm up and I have all the time in the world to do whatever I like, and one thing I really like is PEANUT BUTTER.

If you don't already have it, I recommend buying The Body Bible by Clean Eating Alice. Packed full of healthy recipes and exercise tips, it is my go to book for clean yet delicious food. She is a fellow peanut butter lover and has created the most delicious breakfast, perfect for my lazy weekend.

Here is the recipe - go nuts.

What you will need:
Serves 1

2 slices of rye bread
2 tbsp of peanut butter
1/2 banana, thinly sliced
1 free-range egg
1/2 tsp ground cinnamon
50ml unsweetened almond milk
coconut oil, for frying
fresh berries/grapes and Greek yoghurt, to serve


1. Slice the bread into halves, layer the banana and peanut butter and sandwich together.

2. Whisk together the egg, cinnamon and almond milk and soak both sides of your sandwich until fully coated.

3. Heat the coconut oil in a non-stick frying pan and gently lay your sandwich in to fry for about 4 minutes each side.

4. Plate up and top with fresh berries/grapes and Greek yoghurt, if you like.

Having started the weekend with PB I thought, well why not end it that way too! My go to satay chicken will change your life. So simple and super tasty. Add chicken breast strips, mange tout, baby corn and red peppers to a pan until cooked. Mix 200ml boiling water with a splash of soy sauce and 2 tbsp of peanut butter (I use crunchy) then add to the pan. You could also prepare marinated chicken on sticks and smear on the sauce after for quick and easy chicken satay skewers.

I buy the Meridian peanut butter 1kg tubs (that should probably last me longer than it does) which is available here from Holland & Barrett.
